Something Sweet
Midsummer Peaches and Cream
A dish built from the realisation that a quiet night in is all I need.
After partying, dancing, and drinking, I decided enough was enough!
White Chocolate Burnt Basque Cheesecake with Prosecco-Poached Peaches
Big Plates
Mild Summer. Spicy Aftertaste
A dish built from contrast: soft seafood, fiery bisque, and silky cream — all plated with intention.
A reflection of a day that lingered, transformed into something rich, layered, and unapologetically expressive.

Seasons Between
A dish that sits right on the edge of seasons — where the comfort of spring gives way to the freshness of summer. Rich, confit chicken meets the brightness of lemon thyme velouté, with smoked butter pomme purée and roast garlic cream offering depth, while charred baby gem and herb oil lift it into something lighter. It’s not just a plate of food — it’s the feeling of longer evenings, changing moods, and a soft step forward into summer.

Lemon Meringue Pie
This weekend, I decided to make one of my absolute favourite desserts—an utterly delicious and refreshing summer treat. The light, zesty lemon flavours were beautifully enhanced by subtle floral notes from wildflower honey and elderflower, creating a perfect harmony of freshness. It was a delightful and invigorating dessert that captured the essence of summer.

A Caravan Summer
Inspired by my visit to the Pipe and Glass Inn, I created this recipe for Father's Day. It reminds me of the summers I spent with my grandparents in Cleethorpes.

Pumpkin Seed and Dried Cranberry Flapjack
Something which is simple yet incredibly comforting. The extra crunch from the pumpkin seeds and the tartness of the cranberries make it a winner!
