Butter - 185g
Soft Brown Sugar - 125g
Golden Syrup - 90g (3 tablespoons)
Rolled Porridge Oats - 250g
Pumpkin Seeds -100g
Dried Cranberries - 100g
Salt - 1 pinch
Method.
.1.Preheat the Oven: Preheat to 180°C (350°F, Gas Mark
2.Prepare the Tin: Line a 20cm (8-inch) square baking tin with baking parchment.
3.Melt: In a saucepan, melt the butter, soft brown sugar, and golden syrup together over low heat until smooth and combined.
4.Mix Dry Ingredients: In a large bowl, combine the oats, salt, ginger, pumpkin seeds, and dried cranberries.
5.Combine: Pour the melted butter mixture into the dry ingredients and stir well to ensure everything is evenly coated.
6.Transfer and Flatten: Transfer the mixture to the prepared tin and press it down firmly to create an even layer.
7.Bake: Bake for about 22 minutes, or until golden brown around the edges.
8.Cool and Cut: Allow to cool in the tin before cutting into squares or bars.
