
Pickled Fennel

Ingredients.
Fennel: 1 medium fennel bulb (use 2 bulbs if small), thinly sliced
Pickling Liquid:
500 ml apple cider vinegar (or white wine vinegar)
250 ml water
50 g sugar
10 g salt
Spices:
Zest of 1 orange, finely sliced
2 star anise
5 g fennel seeds (approximately 1 tsp)
5 g black peppercorns (approximately 1 tsp)
1 g anise seeds (approximately ¼ tsp)
1 clove garlic, smashed (approximately 4-5 g)
Method.
1.Prepare the Fennel:
Thinly slice the fennel bulb(s). If using two small bulbs, slice both.
2.Make the Pickling Liquid:
In a medium saucepan, combine the cider vinegar, water, sugar, and salt. Stir until the sugar and salt are fully dissolved.
Add the orange zest, star anise, fennel seeds, black peppercorns, anise seeds, and smashed garlic clove to the liquid.
3.Heat the Pickling Liquid
Bring the mixture to a boil over medium heat, then reduce to a simmer and cook for about 5 minutes to allow the flavours to meld.
4.Combine Fennel and Liquid:
Place the sliced fennel into a clean, heatproof jar or container.
Pour the hot pickling liquid over the fennel slices, ensuring they are fully submerged. If necessary, weigh down the fennel with a clean object to keep it submerged.
5.Cool and Store:
Let the pickled fennel cool to room temperature.
Once cooled, seal the jar or container and refrigerate. The fennel can be enjoyed after a few hours, but the flavors will develop further if left to pickle for at least 24 hours.
